5 Minute Guacamole

Life now is a bit hectic. We aren’t living at home because our house is going under some renovations, so we are staying at a nearby condo. It’s been good in the sense that it feels like I’m on vacation, I haven’t brought too many things with me, just the essentials. The kitchen has a couple of pots and pans but not near enough what I use on the regular, so I kept groceries this week to a bare minimum.

I had a friend who was coming to visit, and I didn’t have much I can offer in terms of food. I usually like to bake when friends visit, especially friends I don’t see on the regular. Well no baking ingredients or baking tools.

I looked in my fridge and lucky for me I had most ingredients I would need to make a quick guacamole, and really who doesn’t like guac?

I mixed my ingredients and I also happen to have some organic corn chips. There ya go, I had the perfect snack for the perfect afternoon with my dear friend.




  • 3 Medium Ripe Avocados
  • 1/4 Medium Onion chopped
  • 1/2 Tomato diced
  • 1 tbs Olive Oil
  • Juice of half a lime
  • Salt & Pepper to taste
  • Cilantro for garnish (didn’t have fresh so I used dried)


  • scoop out the avocados and use a fork to smash them into a bowl
  •  Add olive oil, lime juice, and mix until desired consistency
  • Add remaining ingredients and mix some more
  • Add cilantro for garnish
