Chickpeas & Sweet Potato Burger

It is BBQ season and it is my first vegetarian summer. Last summer putting burgers on the grill were our go to dinners after long days in the sun. It was fun, tasty and easy. I must admit it is one thing I miss since giving up meat, which is why experimenting with different vegetarian burger recipes, is so important to me. This was my first time trying this recipe and my, did I enjoy it.

Ingredients

  • 1 sweet potato (roasted)
  • 2 cups cooked chickpeas
  • 1 and 1/2 cups whole oats
  • 1 diced bell pepper
  • 1 small diced onion
  • 2 tsp olive oil for sautéing
  • 2 cloves of minced garlic
  • 1 chia seed egg
  • 1/4 tsp garlic powder
  • 1/2 tbsp burger seasoning of choice
  • 1/4 tsp cayenne
  • salt and pepper, to taste
  1. Peel and cut the sweet potato into cubes and put in the oven for 20 minutes at 400 F.
  2. Once roasted, puree the sweet potato leaving some texture and then add to a mixing bowl.
  3. Add chickpeas to a food processor. Pulse but also leaving some texture.
  4. Add to the mixing bowl.
  5. Pulse one and a half cups of oats in your processor until flour-like then add to the sweet potato mixture.
  6. Sauté onion, bell pepper, in oil over medium-high heat.
  7. When onion is translucent, add garlic and continue to sauté until the veggies are translucent and tender.
  8. Add sautéed veggies to the sweet potato mix then add 1 chia seed egg to the bowl along with seasoning of choice, garlic powder, cayenne pepper, and salt.
  9. Stir to incorporate and divide burger mixture into 4-6 balls.
  10. Cup each ball in your hands and squeeze, pressing it into flat burger shaped patties.
  11. cover, and refrigerate for 20-30 minutes or overnight to set the burgers.
  12. In a skillet, heat some oil to medium high, and cook for a few minutes on each side until they crispy golden.
  13. Add to your favourite bun and condiments and enjoy!
